Bánh mì, one of the most lasting outcomes of the French colonisation of Vietnam, the original East meets West marriage. Chef Bao La of Le Petit Saigon wondered - if these two cuisines colliding could create something so wonderful, what would happen if we took the bánh mì on a trip around the world? The Bánh Mì du Monde series celebrates the many different cultures, cuisines and talents of chefs at Black Sheep Restaurants, inviting them to create their signature bánh mì inspired by their own heritage and culinary backgrounds.

JAPAN WITH CHEF SHUN SATO

Chef Shun Sato of Fukuro follows in the series, with a bánh mì inspired by Tokyo’s iconic on-the-go sandos. We’re talking juicy Kagoshima pork katsu, tangy Tonkatsu sauce and a rich Japanese mustard coleslaw stuffed between the fluffy walls of a freshly baked baguette.
